From Shade to Stone: The Meticulous Art of Making Matcha

At FRESH BOBA, we believe that the best drinks start with the best ingredients. While you might know matcha for its vibrant green hue and earthy flavor, the journey from leaf to latte is a meticulous, centuries-old art form.
Today, we’re sharing the journey of how the organic, ceremonial-grade matcha we source is crafted with such care.
1. The Big Shade
The journey begins on the tea farms of Japan, about 3-4 weeks before harvest. Tea bushes are covered with bamboo mats or black mesh to block out up to 90% of sunlight. This “stress” forces the plant to produce massive amounts of chlorophyll (giving it that deep green color) and L-theanine, the amino acid responsible for that signature “umami” sweetness and calm energy.
2. The First Flush
Timing is everything. The organic matcha we serve comes from the “First Flush”—the very first harvest of the year in late spring. Only the youngest, most tender top leaves are hand-picked to ensure the highest quality and most delicate flavor.
3. “Killing the Green” (Steaming)
Within hours of picking, the leaves are steamed for about 20 seconds. This crucial step stops oxidation in its tracks, locking in the bright green color and nutritional goodness. Without this, the leaves would turn brown and lose their fresh aroma!
4. Cooling & Drying
The steamed leaves are gently cooled with air blowers and then spread out to dry in specialized ovens. At this stage, they are known as Aracha (rough tea).
5. Creating Tencha
This is where the real precision happens. The dried leaves are de-stemmed and de-veined, leaving only the purest parts of the leaf. These tiny, jade-colored flakes are called Tencha—the raw material for true matcha.
6. The Slow Grind
Traditional granite stone mills are used to grind the tencha into a microscopic powder. The mills turn incredibly slowly to prevent friction heat, which could scorch the leaves and ruin the flavor.
Fun Fact: It takes about one full hour of stone grinding to produce just 30 grams (one small tin) of high-quality matcha!
7. Perfection in a Cup
Finally, the powder is sifted for a silky-smooth texture and vacuum-sealed to protect it from light and air.
